Buttermilk pudding with local strawberries
Recipe by Chef Andy Bunn Cafe Sopra Fratelli Fresh
Ingredients
600mls buttermilk
75g sugar
1 vanilla bean
1 3/4 leaves of gelatine (or 6 grams)
Method
(serves 6)
1. Soak gelatine in cold water until softened.
2. Wring dry
3. Warm up 150mls of buttermilk with the sugar and gelatine to dissolve
4. Whisk to combine
5. Split between 6 dariole moulds
6. Leave overnight in fridge to set
7. Serve with fresh strawberries
